Blue Crab Au Gratin


2-1/2 Cups fresh lump blue crab meat
4 Tbsp butter
2 Tbsp flour
1 tsp salt
1/2 tsp pepper
1 Cup half and half
1/2 Cup milk
1/2 Cup white wine
1-1/2 tsp grated onion
1-1/2 Tbsp lemon juice
1 Cup grated cheddar of Swiss cheese
1/2 Cup bread crumbs
butter

Preheat oven to 350 degrees.  Melt butter in medium saucepan; stir in flour, salt & pepper until blended.  Slowly add milk and wine; stir until smooth.  Add onion and lemon juice.  Cook over low heat until sauce thickens, stirring constantly.  Grease a 2-qt casserole or 4 shallow gratin dishes.  Pour a small amount of sauce to cover bottom of casserole.  Add a layer of crab, sprinkle with cheese.  Repeat layers and end with a layer of cheese.  Cover with bread crumbs and dot with butter.  Bake for 45 minutes.   Let sit 5 minutes before serving. 
Yields 4 servings.
